A neck or head shot wastes little meat, kills and drops the deer immediately. A center mass shot can destroy a lot of meat. I use a .25-06 for deer. Plus my .30-06 kicks too much. I've tried to picture the bullet being lubed by blood and oil with a pressure wave of fluid ahead of it hitting a slick, hard curved edge of a vertebrae at just the right spot to turn it, instead of the bone disintegrating. I've heard of FMG bullets doing something similar in war. They hit the hip or knee, turn and travel down the leg along the bone. But the bullets didn't fragment.

During world 1 and 2 rifle bullets were solids did not expand. Our hunting rounds are soft point and expand in soft flesh and explode on bone contact. All real hunters know this. I hope.
Soft point bullets behave differently than full jacketed. I didn’t read (chose not too) the full gore, but a thin skinned victim would be most injured by a light bullet ( say 110 grain .308), with thin jacket and a feature to burst the bullet immediately. I have never shot an animal but have shot for example old oranges with fast, light, soft pointed bullets and these fragmented within the Orange. The orange turns to mist. The energy transfer creates pressure waves that convert to shear waves at density gradients. Bone I believe can shatter when confronted with a pressure wave moving through wet media.
